The Italians got it right with pizza – thin crust is the way to go. Channeling the spirit of their Neapolitan ancestors, Gastown’s newest pizza joint – Nicli Antica Pizzeria – boasts a wood fired oven, crafted from the stone of Mt. Vesuvius, with genuine “00” Caputo flour & real San Marzano tomatoes to give each pie that authentic Neapolitan taste.
Nicli’s secret weapon is a 900*F wood-fired oven, which blasts the pies for 90 seconds at a time, making crusts that are light & fluffy with a soft, thin centre. Don’t be fooled by the size of the pies, though, one isn’t enough to share (nor would your tummy want to). The eats are fantastic but also worth the visit is enjoying the interior of Nicli. Mixing old world & new, gleaming white counter tops & tables pop against the exposed brick walls. If Stanley Kubrick designed a pizza joint, this would certainly be it.
